14 Regulatory Allergens
Gluten, crustaceans, eggs, fish, peanuts, soybeans, milk, nuts, celery, mustard, sesame seeds, sulphur dioxide and sulphites, lupin, and molluscs are among the allergens that must be clearly declared.
Legal obligations for restaurants
You must provide customers with a written, legible, and easily accessible list detailing the allergens present in each dish. A simple verbal statement or inviting customers to "ask the staff" is not legally sufficient in case of inspection.
